QUALIFICATIONS: 3-5 years' Experience Preferred. Be able to speak and understand English & Spanish Culinary Education Be able to supervise high volume line and operations. Strong hand-on line skills and a good deal of smaller upscale sushi experience. Be able to monitor company standards. Skills in food and labor cost control, scheduling, purchasing, menu planning, custom menus, and inventory control. The ability to train and develop staff and Sous Chef.
